** Has It Been Proven That Nutritional Deficiencies Affect Our Health? **
Sound scientific research clearly demonstrates that when populations are subjected to serious, continued nutritional deficiencies, the offspring of each succes-sive generation show an increased deterioration in physical and mental health. Our food quality has eroded very dramatically. In World War II fewer than 68 percent of the men could pass the induction physical, a physical that 86 percent had passed in 1918.
** An Experiment on 900 Cats Showed The Effect Of Cooked Foods **
Francis Pottenger foresaw such a worsening trend in his pioneering work using 900 cats. Felines eating raw meat and raw milk were healthy and gave birth to generation after generation of healthy kittens. The first generation of those on cooked food developed our modern human ailments: heart, kidney and thyroid disease, pneumonia, paralysis, loss of teeth, difficulty in labor, diminished or perverted sexual interest, diarrhea, irritability. Liver impairment on cooked protein was progressive; their feces were so toxic that even weeds would not grow where they had been dropped. Many second-generation kittens were born dead or diseased, and by the third generation, the mother was sterile.
** Food Also Affects Our Behavior **
Extreme behavioral changes also occur as diets deteriorate. Pottenger's cats on inappropriate diets exhibited "anti-social" and perverted behavior; prison inmates' level of violence fluctuates depending on their food. Dr. Price detailed again and again previously unknown behavioral and emotional problems, as well as seriously deteriorating health, he observed in indigenous peoples with the introduction and adoption of Western food.
** What Happens When We Cook Our Food? **
When we cook, we destroy the enzymes, the life force and the electromotive force. All this has been extensively documented. Ordinary cooking precipi-tates proteins; probably certain albuminoids and globulins are physiologically destroyed. And it renders minerals less soluble by altering their physicochemical state. When we overcook food, over-process food, barbecue food, all past the "heat-labile" point, we change their chemical configuration. Nutritionist Nancy Appleton, PhD, expressed all this very well: "We've evolved from early man able to eat food in a certain chemical configuration. With these new configurations, we don't have the right enzymes to digest it. The right digestive mechanism is another whole story in itself. But mostly due to processed foods and, of course, sugar in so many processed foods, we are getting degenerative diseases."
** What Health Problems Are The Result of Eating Cooked Foods? **
Burned and browned foods, highly heated fried foods, increased saturated fats--and in particular those "convenience" foods laden with dangerous trans fatty acids--that make up a substantial part of the American diet, are greatly increasing our risk of cancer and of ill health in general. A cooked-food diet, consumed over a period of years, "insures that your body will attempt to heal your bones and joints abnormally with resultant osteoporosis, arthritis, spurs, worn out cartilage, calcium deposits, and more.=20
** How about Frozen Foods? **
Cooking destroys the cells of fruits and veggies. Even frozen foods have been cooked. Processors blanch vegetables before freezing and packaging. The water is heated above 180o F. for about three minutes--long enough to destroy the enzymes, which do not survive above 127 degrees, some say 118 degrees.
** What Must We Do To Have Healthy Bodies? **
"To have healthy cells, you must eat live fruits and vegetables. If you eat cooked and processed foods," wrote wise Charles Walters, editor of Acres-USA, "you are eating essentially embalmed foods. And so you are embalming yourself." When you cook, destroying the life force and enzymes, your body has to take enzymes it makes [mostly in the pancreas], and as a result they don't go to the glands in your system that need them to function properly. Ultimately, the store of pancreatic enzymes gets used up, leading to deteriorating health. And cooked food will either ferment or putrefy in your digestive system.
